The trifolao (truffle hunter) leads the dog into the so-called “pasture”, areas known for truffle growth. When the dog signals a truffle, they dig gently with a small spade (“vanghetto”). The truffle then goes into the traditional bag called catana.

The main truffle varieties in Piedmont
Piedmont is home to several truffle varieties—some of Italy’s most prized. Each season has its star, and every truffle brings its aroma, flavor, and personality. Here are the standouts:

Precious White Truffle (Tuber magnatum Pico): the most famous, harvested from late September to December. The undisputed star of the Alba White Truffle Fair.

Precious Black Truffle (Tuber melanosporum): a winter gem, loved for its balanced taste.

Bianchetto or Marzuolo (Tuber borchii): from January to April, pungent and distinctive.

Summer Black Truffle – Scorzone (Tuber aestivum): May through August, the most accessible and delicate.
Truffle hunting: a craft (and a passion)
Truffle hunting isn’t a casual pastime. You earn a regional license valid for five years by passing an exam, and you must be at least 14 years old. The real secret is experience, honed season after season.
You always search with a trained dog: the best known is the Lagotto Romagnolo, but Pointers, German Shorthaired Pointers (Bracco Tedesco), and mixed-breeds make excellent partners too. Fun fact: people once used pigs—banned by law since 1985.
The truffle hunter, also called the handler, guides the dog to the “pasture”—areas where truffles can grow. When the dog signals a find, the hunter uses a small spade (vanghetto) to lift it carefully and then replaces the soil to protect the truffle ground.
Hunters then store the truffles in special bags (catane) or baskets. Rules apply: a 2 kg maximum per day, a ban on night searches, and strict respect for the official calendar.
